Peach season has arrived here in Delaware and this sweet delicious fruit is abundant. Here is a delicious and healthy recipe created by Chef Hugo for you. Enjoy!

Hugo's Peach Bread

1 cup fresh ripe peaches, cored and diced
1/2 cup organic honey
1/2 cup brown sugar
1 whole egg
1 egg white
1/2 cup orange juice
1 teaspoon vanilla extract
1 3/4 cups whole wheat flour
2 teaspoons baking powder
1/2 tablespoon nutmeg
1/2 teaspoon cinnamon
1/2 cup walnuts, chopped
1/4 cup flax seed oil

. Preheat oven to 350 F. In a large bowl, stir together peaches, honey, brown sugar, flax seed oil, eggs, orange juice and vanilla extract. Slowly add dry ingredients to mixture. Stir until well blended. Fold in walnuts.

2. Grease 9 by 5 bread pan with cooking spray. Pour batter evenly into pan.

3. Bake 45 minutes. Remove from oven when toothpick inserted into center of bread comes out clean. Cool in pan for ten minutes and transfer to wire rack.
