BLUEBERRY QUESADILLA RECIPE YUM!


Blueberries are considered one of the super foods. A fruit that is rich in anti-oxidants, blueberries are thought to help prevent cancer and ward off premature aging.
Here is a delicious Blueberry Quesadilla recipe for you. This is a healthy dessert or can also be paired with some protein for breakfast. Our two year old daughter loves these and would eat them for breakfast. lunch and dinner if she could. Enjoy!
Blueberry Quesadillas

Serves 2

¼ cup Nuefatchel or nonfat cream cheese, softened or whipped
1 tablespoon organic honey
2 whole wheat tortillas
¼ cup blueberries

In small bowl, beat together cream cheese and honey. Carefully spread ½ cream cheese mixture on each tortilla. Place blueberries on top of cream cheese. Fold tortilla in half. If desired, lightly toast for five minutes or place in microwave for 30 seconds. It is also delicious if served cold. Cut in half or fourths and serve.

If you don’t have blueberries lying around try adding strawberries or bananas to your quesadilla instead. Yum!
