HAPPY FATHER'S DAY AND ANOTHER STRAWBERRY RECIPE FOR YOU


Happy Father's Day to you! I am so grateful that my dad is here with me on Father's Day. And I am incredibly grateful that Hugo is such a great dad to our two year old daughter. Mere words can't express the appreciation I have for these two men. We had a fun morning eating pancakes and opening gifts. Here is a delicious strawberry pancake recipe for you to enjoy. Yes, as you can tell, it is still strawberry season here in Delaware and our fridge is still overflowing with berries.




Whole Wheat Strawberry Pancakes

Serves 6

1 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 cup skim milk or soymilk (try carob or choclate flavored soymilk if you are feeling adventerous)
1/2 cup strawberries, hulled and diced



1. Mix whole wheat flour, baking powder, salt and baking soda together in a large bowl.


2. Gradually stir on milk and strawberries.


3. Spoon 1/2 cup batter into non-stick griddle for two minutes or until pnackes is bubbly and golden. Flip pancake and cook for additional minute or until done. Serve warm with additional strawberries as garnish.
