A HEALTHY AND DELICIOUS RECIPE TO SHARE WITH FRIENDS!




Happy Friday! Did you know that having strong social ties is linked with better health and wellness. Research shows that people who have intact support system live happier, healthier lifestyles. With that in mind, Hugo and I would like to share our favorite crab dip recipe with you. This dip is best when shared with friends and a nice way to keep entertaining simple. It's a healthy version of what Hugo used to serve at Hugo's Inn. It's a real crowd pleaser.




So go ahead and invite some friends over this weekend. Don't wait until you replace the carpet or clean the upholstery. True friends don't care about that stuff. Life is too short. Be in the moment and live for today!




Hugo's Healthy Crab Dip


Serves 8



8 ounces of fat free cream cheese, softened


2 tablespoons of skim milk or soy milk


1 cup pasteurized jumbo lump crab meat (or use imitation krab)


2 tablespoons finely chopped scallions


2 teaspoons cream style horseradish


salt and pepper to taste


1 cup finely chopped walnuts




1. In a large bowl, beat together cream cheese and milk. Gradually add crab, scallions, horseradish, and 1/2 cup walnuts.




2. Salt and pepper to taste. Stir well and place dip in baking dish.


Sprinkle 1/2 cup walnuts on top of dip.




3. Bake for 20 minutes or until crab dip is hearted through. Serve immediately with veggies strips and whole wheat crackers.
